One Week of Food (Day One 4/10/11)

It’s that time of the year, the 2nd annual “One Week of Food” in pictures! Glad you can join me again or if you weren’t around last year – welcome!

Typical of me, I forgot to take a picture of breakfast on the first morning until after I was done eating!

For Sunday morning breakfast we made pancakes from scratch with bananas, blueberries and maple syrup. We also made some burnt bacon and apple sausage.

I hadn’t slept well the night before so thankfully Jenny had some iced coffee she shared with me which woke me up during church!

For lunch we had something pretty healthy and that wasn’t a beige color! Grilled cheese on sourdough, sliced mangoes with mango yogurt and salad with toasted pecans, homemade dressing, and feta cheese.

For dinner we ordered from the best pizza in Ventura County – Topper’s. Nice way to round out the weekend, no cooking, not much to clean up, left overs for lunch later in the week!

And finally, a little bit of chocolate ice cream cooled my stomach at the end of the night.

    My eats today:
    Breakfast:
    Coffee with coconut milk
    Avocado with berries and liganberry preserves
    Lunch:
    chicken sausage tacos with broccoli slaw, avocado, beets, and salsa
    Snack:
    Handful of brazil nuts
    Dinner:
    Orange bell pepper, zucchini, green onion, garlic, and broccoli slaw sauteed in grass-fed butter, hard boiled egg.

      Yay! Jenny’s goal this year was to make the food less beige and more green, it’s working! You should take pictures of your food, it sounds amazing!
